- 2 cups corn (~4 ears)
- 1 cup avocado, dicedAvocado
- 1/2 cup flour
- 1 large egg
- 1/2 cup cheddar cheese, grated
- 2 green onions, sliced
- 1 tablespoon cilantro, chopped
- 1 lime, zest and juice
- salt and pepper to taste
- 2 tablespoons oil

Note: You may need to add extra flour so that the mixture can be formed into patties.
Option: Replace the flour with corn flour or rice flour for gluten-free.
