Cheesy Bacon Black Bean Dip







Cheesy Low Carb Meatloaf

ingredients



  • 6 strip bacon (omit for vegetarian)

  • 1 small onion, diced

  • 2 cloves garlic, chopped

  • 1 teaspoon chipotle chili powder

  • 1 teaspoon ground cumin

  • 2 (15 ounce) cans black beans, rinsed and drained

  • 1/4 cup water (or chicken broth)

  • 1 cup monterey jack cheese, shredded

  • 1 cup cheddar cheese, shredded

  • Cook the bacon in an oven safe skillet and set aside to cool before crumbling, reserving 2 tablespoons of bacon grease in the pan.


  • Option: If you are not using bacon, cook the onions in 1 tablespoon oil.
    Note: Add extra water to get to the desired consistence.
    Option: Use 3 cups of cooked cooked dried black beans instead of canned.
    Option: Mix 4 ounces of cream cheese into the dip for an even creamier dip!
    Option: Mix 1/2 cup salsa into the dip!
    Option: Top the dip with you favourite fresh ingredients like pico de gallo, avocado, jalapenos, green onions, sour cream, etc.
    Tip: Leftovers are best warmed.
