Cold Shanghai Wontons In Peanut Sauce and Chili Oil

ingredients



    For the wontons:

  • 1 pound ground pork

  • 2 green onions, thinly sliced

  • 2 tablespoon cilantro, chopped

  • 2 tablespoons garlic, chopped

  • 1 tablespoon ginger, grated

  • 1/4 cup pickled jalapenos, chopped

  • 1/4 cup parmigiano reggiano (parmesan cheese), grated

  • 2 teaspoons toasted sesame oil

  • 2 teaspoons fish sauce

  • 1 teaspoon ground white pepper

  • 1 teaspoon potato starch (or cornstarch)

  • 32 wonton wrappers

  • For the peanut sauce:

  • 1/2 cup peanut butter

  • 1/3 cup apple juice

  • 2 cloves garlic, minced or grated

  • 2 tablespoons soy sauce

  • 1 tablespoon toasted sesame oil

  • For the cold wonton bowls:

  • 1/4 cup chili oil

  • 1/4 cup balsamic vinegar (or Chinese black vinegar)

  • 1 tablespoon toasted sesame oil

  • 1/4 cup peanuts, chopped

  • 1/4 cup green onions, sliced

  • 2 teaspoons sichuan peppercorns, toasted and ground

  • Mix all of the ingredients except the wonton wrappers, place 1 tablespoon of the pork mixture into the center of the wonton wrappers, wet the edges with water, fold and seal.
