Grilled asparagus In Lemon Maple Tahini with tomatoes and Cucumbers

ingredients



    For the grilled asparagus:

  • 1 pound asparagus, rinsed and trimmed

  • 1 tablespoon oil

  • salt and pepper to taste

  • For the tahini sauce:

  • 3 tablespoons tahini

  • 1 tablespoon yogurt

  • 2 tablespoons lemon juice

  • 1 teaspoon maple syrup

  • salt tp taste

  • 1 small clove garlic, grated

  • 2 tablespoons water*

  • For the salad:

  • 1/2 cup cucumber, diced

  • 1/2 cup tomato, diced

  • 2 tablespoons kalamata olives, pitted and chopped

  • 2 tablespoons red onion, diced

  • 1 teaspoon toasted sesame seeds

  • 1 tablespoon parsley, chopped

  • Toss the asparagus spears in the oil, salt and pepper and grill over medium-high heat until crisp-tender and slightly charred.


  • Option: Replace the salt with white miso paste!
    Option: Replace the parsley with mint, cilantro, or basil!
