  • 1 (12 ounce) bag tortilla chips

  • 2 cups Mexican shredded beef or barbacoa beef

  • 1 cup chipotle and ancho cocoa enchilada sauce

  • 1 small onion, sliced

  • 1 jalapeno, sliced

  • 2 cups cheese (such as cheddar and/or monterey jack), shredded

  • 2 tablespoons cilantro, chopped

  • 1/2 cup guacamole

  • 1/2 cup pico de gallo

  • 1/4 cup sour cream



directions


  • Spread the tortilla chips out on a baking sheet in a single layer, top with the beef, enchilada sauce, onion, jalapeno and cheese and bake in a preheated 350F/180C oven until the cheese has melted, about 5 minutes before sprinkling on the remaining ingredients.
