Slow Cooker Chipotle Maple Onion Jam

ingredients



  • 3 pounds onions, sliced or diced

  • 2 cloves garlic, chopped

  • 1 chipotle chili in adobo sauce, chopped

  • 1/4 cup maple syrup

  • 1/4 cup balsamic vinegar

  • 1/2 teaspoon thyme, chopped

  • Place everything in a slow cooker and cook on low for 8 hours with the lid on and another 2-4 hours with the lid ajar, about a 1 inch opening to let the moisture get out. Note: Cook the onions in the slow cooker until a deep golden brown and most of the liquid has cooked off.


  • Option: Omit the chipotle chili pepper in adobo or replace it with 1/2 teaspoon chipotle chili powder or 1 teaspoon hot smoked paprika.
    Option: Replace the maple syrup with brown sugar.
